Ingredients:
6 medium russet potatoes, peeled and diced
1 medium onion, chopped
4 cloves garlic, minced
4 cups chicken broth (or vegetable broth)
1 cup heavy cream
8 oz cream cheese, softened
1 cup shredded cheddar cheese
½ cup cooked bacon, crumbled (plus extra for garnish)
½ tsp black pepper
½ tsp salt
1 tsp dried chives (or green onions for garnish)
Instructions:
Prepare the Soup:
In a 6-quart Crock Pot, combine the diced potatoes, chopped onion, minced garlic, and chicken broth.
