INGREDIENTS:
° 2 large zucchinis (about 300 g)
° 1 onion
° 1 clove of garlic (optional)
° Herbs: parsley, chives…
° 1 egg
° Flour 1 tbsp. spoon
° 2 tablespoons liquid cream (classic or vegetable)
° Salt and pepper
° red pepper, curry, Espelette pepper etc…
° Oil/oil for frying
INSTRUCTIONS:
Wash the zucchinis, dry them and grind finely. Place a clean tea towel inside and press firmly to extract the water.
Finely chop the onion or garlic and parsley.
Mix with grated zucchini, then add the cream and whole eggs, stir, then stir in the flour, salt, pepper and herbs.
Heat 20 g of oil and a little sunflower oil in a pan and make small mounds of dough. Preparation, arrange them in the shape of a crepe and fry for 3 minutes on each side until you get a crepe. It is dark brown. Place your crepe on a baking tray and keep very warm
