Mexican Fideo with Ground Beef and Potatoes

Ingredients:
1 lb ground beef
1 cup fideo (or broken spaghetti noodles)
1 large potato, diced
1 small onion, diced
1 clove garlic, minced
1 can (15 oz) tomato sauce
4 cups beef broth
1 tbsp vegetable oil
Salt and pepper, to taste
1 tsp ground cumin
1/2 tsp chili powder (optional, for extra spice)
Directions:
Step 1: Brown the Beef
In a large skillet, heat the vegetable oil over medium heat.
Add the ground beef and cook until browned. Drain any excess fat if needed.
Season with salt, pepper, ground cumin, and chili powder (if using).
Step 2: Sauté Onions and Garlic
Add the diced onion and minced garlic to the beef and cook until the onion becomes translucent.
Step 3: Add Fideo and Potatoes
Add the fideo to the skillet, stirring occasionally, and toast until lightly golden.
Add the diced potatoes, stirring to combine.
Step 4: Add Tomato Sauce and Broth
Pour in the tomato sauce and beef broth, stirring well.
Bring the mixture to a simmer, cover, and cook for about 15-20 minutes, or until the potatoes and fideo are tender.
Step 5: Serve
Taste and adjust seasonings if needed.
