Instructions
Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
Add Broth and Noodles: Pour in the vegetable broth and bring to a gentle boil. Stir in the macaroni noodles and cook according to package instructions until they are al dente.
Add Cream and Spinach: Lower the heat to a simmer, and add the heavy cream, stirring until well combined. Add the spinach and cook for another 3-5 minutes, or until wilted.
Season and Add Cheese: Stir in Parmesan cheese until it’s melted and blended into the soup. Season with salt and pepper to taste.
Serve: Garnish with red pepper flakes or parsley if desired. Serve warm!
