Creamy Macaroni and Spinach Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup macaroni noodles
  • 1 cup heavy cream or milk (for a lighter version)
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional garnish: Crushed red pepper flakes or fresh parsley

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  2. Add Broth and Noodles: Pour in the vegetable broth and bring to a gentle boil. Stir in the macaroni noodles and cook according to package instructions until they are al dente.
  3. Add Cream and Spinach: Lower the heat to a simmer, and add the heavy cream, stirring until well combined. Add the spinach and cook for another 3-5 minutes, or until wilted.
  4. Season and Add Cheese: Stir in Parmesan cheese until it’s melted and blended into the soup. Season with salt and pepper to taste.
  5. Serve: Garnish with red pepper flakes or parsley if desired. Serve warm!
