THIS IS SO REFRESHING
Ingredients:
2 large cucumbers, thinly sliced
3 large tomatoes, chopped
1/2 red onion, thinly sliced
1/2 cup Kalamata olives (optional)
1/2 cup crumbled feta cheese ( optional)
2 tablespoons fresh parsley, chopped
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
For the Dressing:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon sugar free honey (optional)
1 clove garlic, minced
Salt and pepper to taste
Instructions:
Prepare the vegetables: In a large bowl, combine the sliced cucumbers, chopped tomatoes, and sliced red onion. Add the Kalamata olives if using.
Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, honey (if using), minced garlic, salt, and pepper until well combined.
Toss the salad: Pour the dressing over the cucumber, tomato, and onion mixture. Toss gently to coat the vegetables evenly.
Add the feta and herbs: Sprinkle the crumbled feta cheese, chopped parsley, and oregano over the top of the salad. Toss lightly again to distribute the flavors.
