Mexican Chicken Pinwheels

Ingredients:
• 8 oz. cream cheese, softened
• 1-2 tablespoons Spicy Ranch Dressing
• 10 oz can Rotel Mexican Lime & Cilantro diced tomatoes, drained
• 1/4 – 1/2 cup red onions, diced
• 2 chicken breasts, seasoned, cooked & shredded
• 1 cup Colby Jack cheese or Mexican blend cheese, shredded
• 2 cloves garlic, minced
• 2 teaspoons chili powder
• 1/2 tablespoon oregano
• Salt and pepper to taste
• 6 large flour tortillas
Instructions:
1. I add all the ingredients to a bowl, mixing after each addition.
2. I taste and adjust seasonings if needed.
3. I spread the mixture onto a flour tortilla, leaving about an inch all the way around.
4. I roll tightly.
5. I wrap in plastic wrap and refrigerate the rolls for an hour.
6. I slice about 1-1 1/2 inches thick.
7. I serve.
