2 to 3 ripe bananas, mashed
1 teaspoon baking soda

3/4 cup sugar (reduce to 1/2 cup for less sweetness)
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Instructions
Preheat Oven: Set your oven to 350°F (175°C). Grease a 4×8-inch loaf pan with butter.
Mash Bananas: In a large mixing bowl, use a fork to mash the bananas until smooth. Stir in the melted butter until well combined.
Mix Dry Ingredients: Add the baking soda and a pinch of salt to the banana mixture, stirring well to distribute.
Add Sweeteners and Egg: Stir in the sugar, beaten egg, and vanilla extract until the mixture is smooth and well-blended.
Incorporate Flour: Add the flour to the mixture and stir until just combined. Avoid overmixing to ensure a tender loaf.
Prepare to Bake: Pour the batter into the prepared loaf pan, spreading it evenly.
Bake: Place the pan in the preheated oven and bake for 60-65 minutes. Start checking for doneness around 55 minutes by inserting a toothpick into the center of the loaf; it should come out clean.
Cool and Serve: Allow the banana bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
