Ingredients:
2 ¼ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon salt
1 tablespoon baking powder
½ teaspoon baking soda
½ cup butter softened
1 cup white sugar
⅓ cup brown sugar
2 large eggs, room temperature
¾ cup milk
1 cup pumpkin puree
Cinnamon Cream Cheese Frosting
1 (8 ounces) package cream cheese, softened
¼ cup butter softened
3 cups confectioners’ sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray or line 24 muffin cups.
Step 3: In a medium mixing bowl, add flour, nutmeg, ginger, 1 teaspoon cinnamon, allspice, baking powder, clove, baking soda, and salt. Sift and set aside.
Step 4: In a large mixing bowl, add brown and white sugar, and 1/2 cup of butter. Beat until the texture becomes light.
Step 5: Add the eggs one at a time and whisk every addition. Pour in the milk and pumpkin puree. Stir until well mixed. Transfer the mixture into the flour mixture and stir until well combined.
Step 6: Transfer the batter into the lined or greased muffin cups.
Step 7: Place inside the preheated oven and bake for 25 minutes or until the colour turns to gold and bounces back when pressed.
Step 8: Let it sit on the pans for 5 minutes.
Step 9: Let it sit on a wire and allow it to cool at room temperature.
Step 10: In a medium mixing bowl, add 1/4 cups of butter and cream cheese. Beat using an electric mixer until well mixed. Add confectioners’ sugar, 1 teaspoon ground cinnamon, and vanilla extract gradually and beat.
Step 11: Spread the frosting on top of the cupcakes.
Step 12: Serve and enjoy!
