2 tablespoons of olive oil

1 average-sized onion, diced

2 pieces of garlic, finely chopped

2 carrots, cut into small pieces.

2 pieces of celery, cut into small pieces

1 pepper, chopped (any color)

1 zucchini, cut into small pieces.

1 cup of green beans, with the ends removed and cut into small pieces.

4 cups of vegetable broth

1 can of diced tomatoes (14.5 ounces) with the liquid included

1 teaspoon of dried thyme

1 teaspoon of dried basil

Add salt and pepper according to your preference.

2 cups of fresh spinach or kale

Lemon juice from one lemon (if desired).

Instructions

Cook the vegetables in a big pot with olive oil on medium heat. Put the onion and garlic in the pan and cook until the onion looks clear (around 3-5 minutes).

Include root vegetables: Mix in the carrots and celery, cook for 5 more minutes until they start to become tender.

Add the remaining vegetables: include the red pepper, squash, and green beans. Cook for an additional 5 minutes.

Add liquids and seasonings: Pour the vegetable broth and chopped tomatoes. Include thyme, basil, salt, and pepper. Heat the mixture until it boils, then lower the heat and let it cook gently for 15-20 minutes until all the vegetables are soft.

Add the spinach or kale and cook for 2-3 more minutes until the greens are soft. If you want, you can squeeze some lemon juice to give it a fresh taste.

Serve the soup by pouring it into bowls and enjoy while it’s hot. This soup goes well with crunchy bread or a small salad.
